Amazake barbecue sauce

For a final touch for a stir-fried dish; kids love this sweet & sour taste.

Ingredients 160 g amazake
120 cc soy sauce
1 garlic clove
60 g onion
1 and 1/3 tablespoons vinegar
Method of preparation
  • 1.

    Grate the garlic and onion.

  • 2.

    Pour the amazake into your pot, add soy sauce as well as the garlic and onion grated in step 1, and then heat the pot over medium heat.

  • 3.

    When the sauce starts becoming thick after 2 to 3 minutes, add vinegar and stir. Then, stop heating and pour the sauce into a bottle or jar. Store it in the refrigerator.

Tips
  • Try marinating rehydrated kurumafu (dry, baked wheat gluten cut into ring-shaped pieces) in this sauce for around 30 minutes, and then cook it on a rapeseed-oiled frying pan until both sides turn brown. You will be amazed by the fulfilling taste that closely resembles that of meat. (We advise 1 tablespoon of the sauce per each piece of kurumafu.)

  • Preserve the sauce in a sealed container in the refrigerator. The best-by date is around two weeks.
